January often brings a renewed focus on health, wellbeing, and getting back to basics. For many people, that means reading labels more closely, cooking more at home, and questioning what they’re really putting into their bodies.
For those of us living with coeliac disease, this isn’t a trend, it’s a necessity.
And yet, despite the growing availability of gluten free products, many people are still unknowingly relying on foods that are highly processed, nutritionally poor, and far removed from real food.
The Gluten Free Supermarket Trap
On the surface, supermarket gluten free options feel like progress, shelves full of breads, cakes, and snacks that promise safety and convenience.
But when you look closer, many of these products rely heavily on:
-
refined starches
-
long ingredient lists
-
gums, stabilisers, and emulsifiers
-
added sugars and preservatives
They may technically be gluten free, but that doesn’t automatically make them supportive of long-term gut health, energy levels, or overall wellbeing.
For people with coeliac disease, whose digestive systems are already healing or vulnerable, this matters more than most realise.
Why Ingredient Awareness Is So Important for Coeliacs
Knowing exactly what’s in your food isn’t about food fear or restriction.
It’s about confidence, safety, and nourishment.
When you understand ingredients, you’re better able to:
-
spot hidden risks
-
reduce unnecessary gut irritation
-
avoid foods that “tick the gluten free box” but still leave you feeling unwell
-
choose options that genuinely support healing and health
This awareness often marks the difference between just surviving gluten free and actually thriving.
From Labels to Loaves: The Power of Baking from Scratch
There’s something deeply empowering about baking your own gluten free food, or buying it from someone who truly understands coeliac safety.
When bread, cakes, or pastries are made:
-
in small batches
-
with carefully chosen ingredients
-
in a dedicated gluten free environment
…you’re not just avoiding gluten, you’re reconnecting with food that’s intentional, transparent, and nourishing.
This is something I’ve seen time and time again:
people feel better when they move away from ultra-processed gluten free products and towards simpler, thoughtfully made food.
Why I’m Creating Something Different
Over the years, I’ve supported so many people who felt frustrated, unwell, or disconnected from their food, despite doing everything “right” on a gluten free diet.
That’s why I’m now taking the next step:
creating a gluten free micro bakery and baking school built on trust, transparency, and education.
It’s not just about selling bread or teaching recipes.
It’s about helping people:
-
understand their food
-
feel confident in what they’re eating
-
move away from ultra-processed options
-
and rebuild a positive relationship with gluten free living
A January Invitation
As this project comes to life through crowdfunding, it’s being shaped by the same values I share with my clients:
-
clarity
-
safety
-
community
-
and empowerment
If you’ve ever wished for:
-
gluten free food you can truly trust
-
fewer ultra-processed options
-
or a deeper understanding of what goes into your baking
…then this journey may resonate with you.
I’d love you to be part of it, whether through support, curiosity, or conversation.

Or if you just want to know more, talk through your own gluten free challenges, or explore how learning to bake (or buy) differently could support your health, reach out or book a chat.
Because gluten free living should be about more than just avoiding gluten, it should be about feeling well, informed, and empowered.
